May Baby!

It's officially May 1st!

I can't believe how quickly 2011 is going by! It seems like I just got back from Winter break. Apart from May being a beautiful month in terms of blue skies, blooming flowers, and warm weather, May is my favorite month because it's my birthday month! I'm a May baby :) Some of my other favorite things about May: being able to wear sandals, dresses, shorts; walking outside without an umbrella (sorry April); barbequing outside; my Mother's amazing salsa; and it almost being summer break= no school!

April has been great, but I looking forward to less rain and more sunshine. Of course, April has had some pretty fabulous eats--and of course I'm talking about my infamous breakfast posts! I'm still working on posting more often, in fact, that's one of my May goals! When finals are over and the summer is here, I'm going to be devoting considerably more time to my blog, really developing it and getting it out there to all of you!

But until then, let me share some more great breakfasts :)

Also, I recently discovered, thanks to Julie, banana soft serve. I actually made banana-mango soft serve because I was trying to use up my food in the freezer. OMG. This is the best thing ever.

Look at how nice and yellow that is! Let me tell you, it was delicious! I've made this three times in the past two weeks--obviously not enough ;)

 On Saturday, I woke up wanting something a little bit savory--so I thought, why not give another one of Julie's amazing breakfasts a try! I toasted up some cinnamon raisin bread and coated one slice with a Laughing Cow Garlic & Herb wedge and the other half with some thinly sliced apples. This was definitely a winning combination! Although next time, I'll probably heat up the apples a bit more so they're softer when I bite into the sandwich.
 I had some left over apples from the sandwich (it was a big apple from the farmer's market!) so of course I paired those with some almond butter.
Looks like I covered the cheese half with my apples!
I would definitely have to say that breakfast is my favorite meal of the day--what better way is there to start your day than with a super yummy breakfast? I know, some of you are laughing at how ridiculously obsessed I am with breakfast... you should see me around nut butters.

Well I'm off to finish up some paper editing; it's that time of the year...final papers and final tests!
